Bonsai – 2016 – Rosso di Montalcino DOC

Ruby-red, with reflections of brick. An impressive, strong structure, which brings to the fore an imposing minerality and a long, complex aftertaste. Aromatic, it is expressed through a symphony of tones from intense notes of cherries, strawberries and violets, to notes of balsamic and aromatic herbs. The grapes come from an experimental plantation, with the highest density of vines in the world (62,500 plants / ha), which leads to a self-regulation of the amount of grapes per hectare and the concentration of sugars and aromatic polyphenols. Fermentation and maceration with wild yeast for 25 days in oak barrels. The wine was aged in large oak barrels for 24 months, followed by 6 months in glass.
