Vinification: The must is immediately separated from the skin of the grapes, and then passed into a steel tank to complete its fermentation, for 8-10 days, at a at a controlled temperatureof 180C . The wine is then stored in a special tank, where the must with the same alcohol content is added. The wine is left for a new fermentation, until the desired atmosphere is reached, namely 2.5 atm, therefore, after filtration, the wine will be bottle. Date of harvest: 2nd half of September The aging period in the cellar: 2 years Alcohol content: 11% vol. Total acidity (tartaric acid): 5.8-6 g / l Residual sugar: 12-14 g / l
