The Barruol family has owned the property since 1570, ie 15 generations of dedicated wine growers. Today, the vineyards cover 22 hectares, have an average age of 60+ years and a low yield. The terroir of Saint-Cosme is a true geological mosaic due to the dislocations that led to the formation of the monumental rock chain called Les Dentelles de Montmirail. Saint Cosme is located exactly where two geological faults intersect – another rarity in the field, responsible for the cold microclimate that causes the grapes to ripen late. Hence the balance, freshness and extraordinary finesse of the wines. Variety: Cinsault – carefully selected grapes Color: pink rose Bouquet: elegant and fresh, with the scent of strawberries, cherries, Whitepeaches and spring flowers Taste: complex, crunchy and very harmonious, with very acidity good and delicate and fresh aromas of cherries, strawberries, red berries, nectarines; vibrant and persistent finish Culinary combinations: serve it well chilled, as an appetizer or with salads, fish, grilled meat, pizza, light pasta Serving temperature: 8-10 ° C ”A party in the Basque Country, in July 2018 and the idea of making a quality rosé for parties. This is how Rosé par Saint Cosme was born. We bottle this Cinsault to remind us that a wine drunk with friends is always better. Sharing means you care, so please enjoy the wine and share the same love we put into this project. ”
