General comments: An excellent wine made entirely from Vidiano grapes; a very old variety of Cretan grapes, which has been ignored for many years, but due to the intense and persistent efforts of some Cretan-inspired winemakers has returned to the forefront and produced high quality wines in recent years. “Dafnios” Whitewine is produced without the use of barrels. Type: Whitewine sec. Category: Protected Designation of Origin “Crete” . Features: Pale gold color. Medium intensity aromas of yellow and citrus fruits, which are combinesd with slightly more intense aromas of chamomile, jasmine and spices. Complete and rich aroma, presentsng apricot and flower taste characteristics. Very pleasant, balanced and fine acidity. The privately owned vineyards cover an area of 10 hectares and are located on the slopes of the hills at an altitude of 350 meters. Cultivation is done by mechanical means. Vinification: Classic Whitevinification with fermentation in stainless steel containers, at a temperatureof 18C. There is no use of the barrel, neither in fermentation, nor in maturation. Aging potential: It will last about four years. Alcohol: 13.5% vol. Culinary Associates: Serve at a temperatureof 9-10C; can be an excellent accompaniment to fish such as bream “miller”, John Dory, mackerel and trout. It also accompanies pork with celery, traditional Cretan pork with leeks, “fricassee” lamb with lettuce.
