Domaine De Chevalier 2020 is a Cru Classé de Graves. It is crafted in Pessac-Léognan, Bordeaux, with utmost precision and care. The vineyard uses organic methods and hand-harvests the grapes. Fermentation takes place in temperature-controlled vats for finesse. It ages in French oak barrels, about 35% new wood. This enhances structure without masking natural elegance.
In the glass, the wine shows deep ruby red color. It has vibrant reflections and dense legs with great clarity. The wine’s aroma opens with blackberries and ripe red cherries. Subtle hints of cedar, tobacco, and dark chocolate emerge slowly. There is a floral touch of violets and crushed roses. Earthy notes and graphite provide excellent aromatic depth.
On the palate, it is full-bodied and beautifully balanced. Flavors of cassis, plum, and licorice shine through. Silky tannins support a long and elegant finish. The acidity is fresh, bringing life to the structure. Oak spices blend gently with dark fruit and minerals.
This vintage pairs well with grilled lamb and roasted duck. Mushroom risotto or beef Wellington also highlight its earthy notes. Aged cheeses and charcuterie make great tasting companions. It is ideal for special dinners or refined celebrations. Serve it at 16–18°C in large glasses. It can be decanted for one hour before serving. Domaine De Chevalier 2020 will evolve beautifully for decades. A classic, refined Bordeaux with excellent cellaring potential.
