From its first wines, Apostolos Thymiopoulos was seen as a great hope of Greek wine. It is already a big name. And if you taste his wines, you understand why. His father used to sell grapes produced on the property, but that was until Apostolos finished his oenology studies at the University of Athens. Because, immediately after that, he started making wines with the family grapes. The first vinification took place in 2003. Apostolos made only one wine: Earth & Sky (Earth & Sky). 95% of that production went for export !!! Today, the field located in Trilofos, in the south of the Naoussa region, practices biodynamic viticulture on different types of soils, in which we find either schists, red marble or granite. Although many of its neighbors have irrigation systems, Thymiopoulos does not use this method. This is to allow the grapes to accumulate more tannins, even if the variety can not complain about their lack of phenolic compounds. Protected Designation of Origin “Naoussa”. Biodynamic plantations at high altitudes in Fytia and “warmer” plantations at lower altitudes, near Trilofos. Age of vines: between 25 and 25 years. Sustainable, biodynamic agriculture. Bouquet: complex aromas of fresh strawberries and blackberries, olive paste, herbs, coffee and an elegant vegetable component. Taste < : strong acidity, full body, round and long, complex finish, dominated by strawberry and mushroom cough. Aging potential: over 15 years Culinary combinations: goes perfectly with lamb, with organs, red meat, stew, grilled steak, sausages, wine rooster, matured Gouda or Cheddar cheeses.
