After careful raisins, the grapes are peeled and crushed at the beginning of February; the wort and pomace are fermented for a long period. Then, after a few touches, the wine is transferred to large oak barrels for the aging process that lasts over 3 years. A small portion, about 15% is aged in barriques and then, when added back to large bottle, prints a number of distinctive features. Finally, this Amarone is bottle but is not marketed until after 6-8 months, at the end of the aging process. Robust, full, this wine has a bouquet reminiscent of black cherries in alcohol, sweet wood and leather, plus a subtle note of wood. It is excellent with steaks and game, with matured or very spicy cheeses. Also, is the ideal companion for a conversation at the end of the table.
