Antinori Castello Della Sala Cervaro The name Cervaro comes from the noble family that owned Castello della Sala in the 14th century, Monaldeschi della Cervara. A blend of Chardonnay grapes and a small amount of Grechetto make a wine that can age over time and represents the elegance and complexity of this unique property. Cervaro della Sala is one of the first Italian Whitewines to ferment malolactic and aging takes place in barrels. Cervaro’s first crop to be produced was the 1985 harvest. Castello della Sala is located in the Umbria region, not far from the Tuscan border. It is about 18 kilometers from the historic town of Orvieto. The property of the medieval castle covers an area of 500 hectares. 170 hectares are planted with vineyards at an altitude ranging between 220 and 470 meters above sea level (722/1541 feet) on the slightly rolling hills. They characterize the beautiful rural area of this area. Castello della Sala is the perfect place to grow Whitevarieties. Vineyards grow in clayey and calcareous soils, rich in fossil shells. They are well exposed to sunrise with an excellent temperaturedifference between day and night. The only exception to the rule is Pinot Noir, the only red variety that has found ideal growing conditions in this area to best express its full potential.
