For several generations, the Jean-Marc and Hugues Pavelot estate in Savigny-les-Beaune (Côte de Beaune) has been owned by the same family. Thus, the house’s reputation is based on the science and mastery of winemaking passed down from one generation to another. From here are produced the twelve wines of a very varied typicality. The differences are related to the terroir – each appellation is the expression of a very complex combinestion between the geology of the place, its topography and its history. The altitude is between 220 and 360 meters. The nature of the soil is very varied, and the exposure is oriented to the south, southeast and northeast. The vine is grown exclusively with Pinot Noir and Chardonnay. This is where some of the greatest wines in Burgundy are born. : Coq have wine, beef, feathered game, cheeses Alcohol: 13% Serving temperature 14 ° C Number of bottle produced: 7500-8.000 Maturated 12 months in 25% new barrels.
