For this wine, the plots have an average yield of 8 tons / ha. Vinification method: The grapes, harvested by hand, were cleaned of bunches and lightly pressed. The juice obtained was clarified naturally, at temperature of 8-10¡C, for 48 hours. A slow fermentation followed, in stainless steel tanks, at a controlled temperaturebetween 15 and 18¡C, for 30-45 days. The wine was aged with fine yeasts, with periodic “batonnage” (mixing the yeasts) for 3-5 months. Tasting notes: A classic, strong and expressive Sauvignon Blanc. aging in tanks with fine yeasts, doubled by long fermentation gave the wine captivating notes: from the usual notes of herbs and old tree, to notes of exotic fruits and peach shades, presentsin both the olfactory and taste buds. Recommended serving temperature 11-13¡Alcohol: 12.8% Residual sugar: less than 2 g / lPH: 3.38Acidity: 6.2 g / l .
