PASSAROWITZ 1718 is a wine that simultaneously suggests the German spirit (a certain clarity, harshness, strength, rigor), but also the Oltenian one (a first intense, fresh taste attack, with velvety evolution and fine structure, which masks the hardness and astringency of the end) . A balanced, strong wine with an extraordinary color, in which the wood aroma integrates very well with the aroma of grapes of five varieties. We feel very well overcooked black cherries, blackcurrants, blueberries, cherries, but also dark chocolate, cocoa beans and vanilla, typical of the wood in which it ripened. The taste is full-bodied, robust, extractive, with an acidity that makes it slightly lively, with excellent promises for the future of wine aged in glass, and a enveloping softness in the end. This blending innovation combiness, in addition to the traditional red varieties of the Mehedinţi area (Cabernet Sauvignon, Merlot, Pinot Noir), a noble “foreigner” (Dornfelder) who imprints the wine with finesse and a spicy aroma. Passarowitz, Oltenia came under the administration of the Habsburg Empire. The concept of “clash of civilizations” had not been invented, but Germanic rigor, the proverbial humor of the locals, and the well-being of the Ottomans were almost palpable factors of collision. In 1738, the Empire shrank after unsuccessful attempts at reviewing, some success in mapping, and “marking” the land with the first buildings — monasteries and mansions — meant to last. Today, the spirit of the place, the one that made the Germans abandon the project, still has sparkles of rigor and precision. Just when you are sure that the whole village is taking a nap and you realize that the work can no longer be finished, a divine “jerk” sets things in motion with unprecedented speed. And the conclusion – on time! – the work is done with the joke and the song that best circumscribes the spirit of the place. Next, obviously, the siesta… The traditions, customs, beliefs of the Deep Oltenia are nothing but daily breaths, fresh, of some values that surprise every time by their originality and power. The stories usually start with “Once upon a time like never before… ”This“ once ”has a documentary side for Crama Oprișor, but also a reflective note. Looking back is not just a look thrown over the shoulder, but a proud turn back in time to reveal to people the foundation on which we build concepts and values.
