For Scaia Torre Mellotti, the winemaker applies the appassimento technique traditionally used with Corvina grapes in the Valpolicella area to a 100% Cabernet Sauvignon wine. Made from 50% fresh grapes, 50% dried grapes (short withering: 1 month).
The result is a well-structured wine. The wine presents a flavor profile that is both familiar and remarkably different to most red wine drinkers.
Color: ruby red with hints of purple.
Bouquet: fruity, notes of small red fruits, blackberries, red currants and cherry.
Taste: Sweet and soft.
Food pairings: Serve with white and red meat whether fried, skewered or grilled. Perfect with mature, hard or fresh cheese. Vegetable soups, pasta dishes with sauces.
Serving temperature: 14 °C – 16 °C.
Aging potential: 10 – 15 years.
