Tones: rose petals, pink Sensory characteristics: Mateus Rosé Sparkling has a wonderful color, pale, similar to pink rose petals, with subtle salmon reflections. The abundance of bubbles creates a persistent, aerated, fine wine. Refined and fresh, with floral notes, this wine has pleasant aromas of apples, pears, raspberries, as well as subtle notes of toast that combines with fresh, lively acidity, resulting in an aromatic and delicate finish. Vinifier: Miguel Pessanha Vinification: For this wine, the grapes were harvested early, in order to keep their fresh aromas, specific to the variety, acidity and to prevent the developsent of tannins. . Light pressing is followed by a slow fermentation at low temperatureto preserve the young and fresh characteristics of the wine. This wine is subjected to a secondary fermentation in tanks at 160C. In this secondary fermentation, distinctive bubbles are added, and the typical, creamy, complex finish also develops. The end result is a cold stabilized wine and then bottle. Aging: After 2 months of aging, Mateus Rosé Sparkling Brut is ready to drink. Culinary Recommendations: Mateus Rosé Sparkling Brut can be a wonderful appetizer or with canapés. Another alternative would be to serve it with pork steak. It can also be served at the end of the meal, accompanied by fresh fruit tarts, fruit salads and Pavlova raspberries.
