To be labeled “Champagne”, a sparkling wine must come from this north-eastern region of France, called Champagne, and adhere to strict quality standards. With almost negligible exceptions, three varieties are permitted for use. in Champagne: Chardonnay, Pinot Noir and Pinot Meunier. They can be blended or bottle as individual champagne, depending on the final style of wine desired. Chardonnay, the only Whitevariety, contributes to freshness, elegance, lively acidity and notes of citrus, orchard fruits and Whiteflowers. Pinot Noir and the rudiment of Pinot Meunier, provide the backbone of many blends, adding grape, structure, body and supple flavors. It is an exclusive blend of Pinot Noir and Chardonnay from eight classic Grand Cru plots. According to the style of the house, which is dominated by Pinot Noir, the blend is 53% Pinot Noir and 47% Chardonnay. The wine has an intense color with golden sheen and very bright bubbles. Each cuvée of La Grande Dame has an exceptional aging potential.
